Der Weißburgunder Blanc de Blancs bekommt anschließend rund 18 Monate Hefelager auf der Flasche und wird dann brut nature, also ohne Süßezusatz, degorgiert. Der Holzeinsatz ist hier so gut verwoben. Bei diesem Sekt sind wir qualitativ in einer Dimension angekommen, die an die Champagne erinnert. Kein Wunder bei einem Hefelager, das die meisten Standard-Champagne bei weitem übertrifft. Die Nase ist typisch Blanc de Blancs, weißfruchtig, straight und geschliffen, weißer Pfirsich, Birne, angeschnittener Apfel, Austernschale, unterlegt von weißen Blüten und gerösteten Mandeln, durchaus Tiefe und Komplexität andeutend.
