Although the harvest was smaller than anticipated, the 2025 vintage is being hailed as exceptional across Hawkes Bay. Favorable weather conditions allowed the vines to ripen perfectly, free from disease pressure. This resulted in excellent ripe-ness, with wines showcasing impressive flavor intensity and depth.
The grapes were harvested, destemmed and gently crushed direct to press with minimal skin contact. The clarified juice was cool fermented with selected yeast strains to maximise the aromatic qualities and retain the primary varietal characters.
Pairs well with fresh seafood, a summer goats cheese, rocket and nectarine salad,
topped with a few strawberries, or grilled vegetables.
