Known for producing exemplary traditional Sardinian wines, Gabbas’ Cannonau is elegant and expressive, with a fragrant bouquet of fresh raspberries and violets, soft tannins and a hint of white pepper on the finish.
Gabbas is a family-owned winery located at the base of the Supramonte mountains, in the Locoe Valley. Giuseppe Gabbas is the latest descendant to take over winemaking for this renowned Sardinian estate and is held in high regard for making quality wines which represent this unique terroir. They own 20 hectares of hillside vineyards, of which 80% are planted with Cannona.
Cannonau (also known as Grenache) is without doubt the star of Sardinia, this late ripening grape variety works so well in this particularly hot, dry climate, benefitting from strong coastal breezes, moisture retaining soils and protection from the mountains. Gabbas Cannonau di Sardegna Lillové is made from 95% Cannonau and 5% Muristellu (another local variety). Fermentation takes place in stainless steel tank for around 12/15 days. After alcoholic fermentation Giuseppe puts the wine through malolactic fermentation, a process of turning the sharp malic acids into lactic acids, which makes the wine softer and more velvety in texture. He then leaves the wine to mature in the same tank for a further 8 months of refinement. Giuseppe believes in minimal intervention during the production process, his winemaking style is simple, which makes these wines ever more compelling in their integrity.

There is a regional Sardinian dish called Malloreddus alla Campidanese (gnocci shaped pasta with a sausage, saffron and tomato sauce) which is an ideal match, and a winner if you are looking to step away from your usual ‘spag bol’ game.
