Dedicated to the memory of Sophie Valrose, a woman whose values we try to emulate in every corner of the Bijou identity. Sophie worked in the vineyards of Languedoc during the late 19th century. During this time, women often did a significant share of the work while being overworked and underpaid. In the face of this exploitation, Sophie fought for the rights of her fellow women working in the vineyards, drastically improving the conditions. Sophie Valrose is now heralded as a local legend in the area, and we have developed En Mémoire to honour her. En Mémoire is a love letter to all the hardworking women in wine.
The Triassic clay-limestone soil of the plateau of La Roquebrussane is located at an altitude of 360 metres. The terroir of the Centre Var and its mild microclimate, give the vines an optimally healthy environment to create incredibly high-quality grapes. These conditions allow for the vineyard to follow the best organic agricultural practices.
Mechanical harvesting is carried out at night to preserve the freshness of the grapes and thereby facilitate the extraction of flavours and skin macerations. Temperature-controlled fermentation takes place between 16-18 degrees Celsius. Malolactic fermentation is avoided to retain the bright primary aromas of the grapes. Prior to bottling, the wine is aged and fined.
Food Pairing: This wine is a perfect companion to summer al-fresco dining. It is the ideal partner to for salads, summer barbecues and fresh fruits.
