WINEMAKING
Harvested in the cool hours of early morning and transported directly to the winery for delicate processing. Gentle extraction, pristine juice, high solids, cultured yeast, and barrel fermentation followed. After fermentation, the barrels were sulphured and topped, with weekly stirring until the desired flavour profile was achieved. The wine underwent ten months of maturation before blending and preparation for bottling.
