Somewhat similar to Cachaca and Rhum Agricole, Clairin is produced using the juice of the sugar cane, rather than molasses. Unlike Agricole, however, Clairin tends to be distilled in a pot still, as this expression is.
Sonson is a small single pot still distiller in the Haitain village of Cabaret. Clairin is made here in the traditional manner, using Madame Meuze sugar cane, and an open flame, wood fired still.
The spirit itself is bright and ever so slightly vegetal, with notes of grassy sugar cane, some olive brine, chilli and pepper spice, a little creaminess, some slight smoke, overripe pineapples, flinty minerals and sweeter sugar.
