Vinification
Manual harvest in 15 kg crates. Manual selection on a sorting table. After destemming and crushing, fermentation in stainless steel tanks at controlled temperatures, with maceration suited to the characteristics of the grapes.
Vineyards
Between 15 and 20 years old, between 600 and 700 meters.
