Misono Sujihiki Knife 305mm (Misono Salmon, Molybdenum Steel)

This is a Sujihiki knife by Misono. Sujihiki knives are slim slicers used for trimming sinew and slicing roasted meats thinly and cleanly. This is a Misono Salmon series knife with dimples for improved food release, and it shows very little sign of use.

The blade is double-bevel stainless molybdenum steel, providing good rust resistance and easy maintenance. Its slender shape and light handling make it very effective as a slicer.

The knife has been sharpened and is ready to use immediately upon arrival. Please take care when opening the package. The listed price already includes the sharpening service. A wooden saya is included.

It features engravings and logos such as “MISONO,” “ステンレス” (Stainless), and “モリブデン鋼” (Molybdenum Steel). This Sujihiki is perfect for slicing roast beef, ham, and other large cuts of meat, as well as for portioning large fish fillets when preparing dishes for parties or buffets.

The dimpled blade reduces sticking, allowing long, continuous slices with minimal resistance.
