The coffee

Grown, picked, and processed by women who built something together. ASMUCAFE is the Asociación de Mujeres Agropecuarias de Uribe, a collective of women farmers and landowners in El Tambo, Cauca. Their mission is straightforward: improve their families' quality of life through coffee and contribute to their community by sharing resources, knowledge, and support. A price premium on every bag goes directly toward female empowerment projects within the association. This is coffee with a clear line from cup to community.

Origin

Cauca is one of Colombia's coolest and most complex regions. Stretching from the Western Cordillera to the Pacific Ocean, Cauca's elevation and ocean winds keep temperatures lower than most Colombian growing regions. The Popayan Plateau, volcanic mountain ranges, and river systems create diverse microclimates across the region. Much of the coffee here is grown by indigenous and Afro-descendant communities on small farms, which is reflected in the precision and care that goes into each lot.

Process

Double fermented, washed clean. ASMUCAFE uses a two-stage process within the washed method. Cherries sit in loading hoppers for 14 hours before being depulped in the afternoon and evening hours, then go into open fermentation tanks for another 10 hours. After that they are washed three to four times before drying in parabolic dryers or under the sun for 8 to 12 days. It is a washed coffee at its core, but the extended double fermentation is what gives it the dark chocolate depth and raspberry lift you taste in the cup.

Brew it your way

Best as filter, exceptional as espresso. At 1:16 as a filter the raspberry and graham cracker notes come through clearly. Pull it as espresso at a 1:2 ratio in 28 to 32 seconds and the dark chocolate takes over. Either way it is a coffee worth slowing down for.

Meh..., I'll stick to fave pig ear chews
Only 4 for $6, idk these don't last long. I wanted to try them because my dogs love being spoiled but I think I'll stick to pig ears at a discount from Petco. They are very hard, some chews crumble or soften as the dogs knaw at them during the day. However these chews didn't last longer than 10 minutes compared to actual no rawhide alternatives I have used. These didn't do that. No upset stomach so that's a plus. The smell was similar to pig ears also, texture was different. No slimy residue w/ it unlike with the regular 100% pig ears. Helped with plague build up but there is still plague on insicor tooth. Probably won't buy again, meh.
