Desert date oil is composed of about 70% of unsaturated fatty acids (60-63). The major unsaturated fatty acids are linoleic acid (32 to 48%) and oleic acid (22 to 40%) (63, 64), major saturated fatty acids are palmitic acid (12 to 17%) and stearic acid (11 to 13%) [1]
