De wijnbouw van de Saar is met 800 hectare wijngaarden vrij klein. Op de plek waar de Saar uitmondt in de Moezel voert de druivensoort Riesling de boventoon. Bijna 80 procent van de wijnstokken is namelijk beplant met deze witte koningin. Ondanks de in verhouding klein wijnbouwgebied worden hier de beste en meest mineraalrijke Rieslings ter wereld geproduceerd. Het geheim van de Saar is de 400 miljoen jaar oude leisteenbodems. De kale en vruchtbare steile hellingen liggen voornamelijk op het zuiden. Hierdoor is het klimaat wat kouder dan aan de Moezel. Dat zorgt voor lichte witte wijnen die perfect in balans zijn. In de 3e eeuw werd de eerste steen van de huidige Van Volxem wijnmakerij gelegd. Het kreeg pas zijn oorspronkelijke naam toen het losgekoppeld werd van de kerk en werd overgenomen door de Brusselse brouwer Gustav van Volxem. Hij zag direct het potentieel van de wijngaarden in de steile helling van de Saar die behoren tot de beste leisteenwijngaarden van de wereld. De geselecteerde druiven worden na de handmatige oogst voorzichtig geperst en vervolgens spontaan gefermenteerd in grote houten vaten. De rijping vindt plaats gedurende zes tot zeven maanden in roestvrijstalen tanks. De lange bewaring op de fijne droesem geeft de wijn extra complexiteit en romigheid.De aroma’s van Alte Reben Riesling
