The vineyards have been organic since 1998 and they’ve been producing sulphur-free cuvees since 2007.
This delightful sparkling is named with an elaborate pun on the wine being a little crazy and the historic name for Pinot Gris, Tokay d'Alsace. For appelation reasons, this is technically white, but as Yann notes, “Anyone can see the colour themselves!” Refreshing, full of red berries, gentle grip and trademark Alsatian acidity.
